Whether you are a business owner or freeze dried candy enthusiast, we all have had mishaps along the way. Some candies explode while others do nothing - leaving lots of clean up, unfortunate discarded yummies and wasted $$. When I first started, I spent hours trying to track down some help online, and while there were several videos of various content, none shared the actual processes to achieve astronaut level perfection. Also, when seeking new twists on candy classics, there were minimal findings to help support innovative ideas. For those of you not living in a large space station with a built-in lab for trial and error, we'll be sharing our secrets to help minimize wastage and add to your freeze drying enjoyment. In future, we plan on adding photos and videos as well.


For today's initial blog, let's keep it simple. If you are fairly new to freeze drying candy, you'll soon know that a simple thing like laying out product on your trays is a crucial first step. All freeze dried candy expand to some degree and if you are selling your candy, then presentation is nearly as important as its taste. So ensuring each candy has room to grow while staying a single candy is key as well as giving things like Skittles room they need to expand individually. I remember early on buying a bag of freeze dried Skittles to try for the first time. Virtually none of the candies were nice to look at as they had been thrown tightly on a tray and broken up after their freeze drying process had been completed. They were not all that tasty and, had I not seen videos of how they should have been, I probably would never have bought another bag, let along setting up my own candy freeze drying business. Also, I always use parchment paper liners, this helps expedite clean up and you can also layer these to help get the precise heat needed for certain candies, we'll cover that in a future posting on that specific topic.
